Parsley and Tomato Fried Sprats

Sprats are the smaller 'cousin' of herring, but are a cheaper fish, rich in healthy oils, and one of the more sustainable type of fish, which swim in British waters.

Cheap to buy, a kilo can cost 1.99 and will feed a family of five. Here's an easy way of cooking the small whitebait. Quick, filling, and cheap, just what you need on a weekday.

Preparation Time: 5 minutes
Cooking Time: 6 minutes
Makes: 2 servings

3 tomatoes (various types ideally)
2 parsley sprigs
6 sprats
1/2 tsp black pepper
Squeeze of lemon juice
1 tblsp olive oil

Slice the fish heads off.

Remove the small inner guts and de-bone by running the knife down the belly of the fillets and place the knife underneath the bone, gently push 'up' and pull out using your fingers.

Season the fillets with the pepper.

Wash and chop the tomatoes roughly.

Pour the oil into a hot griddle pan and add the tomatoes and basil.

Cook for 5 minutes on a medium heat then transfer the tomatoes to a small plate

Without washing the pan add the fillets.

Add the parsley, lemon juice and fry on both sides for 2 minutes.

Serve the fillets on a seperate plate.

Enjoy as two sides, or as a main meal for lunch.
