Parsnip Mash Corn Beef Hash

Bored of mash potato? Why not try mash parsnip in a corn beef hash?

If you are not a fan of parsnips, then why not try my Corn Beef Sweet Hash which uses sweet potatoes?

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 3

Ingredients
500 g parsnips
90 g margarine
1 tbsp tartar sauce
1 x 340 g tinned corn beef
200 g broad beans
1 onion

Method
  • Steam parsnips and broad beans over hot water for 15 minutes or until soft enough to poke a knife through.
  • Blitz parsnips in a food processor with margarine and tartar sauce to turn it into mash.

  • Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas.
  • Dice onion and mix with corn beef and broad beans.
  • Mix half the parsnip mash with the corn beef and place in a baking dish.
  • Layer the remaining mash over the top and bake in the oven for 25 minutes until the surface turns golden brown.
