Parsnip Mash Corn Beef Hash

Cooking Time: 40 minutes
Serves: 3
Ingredients
500 g parsnips
90 g margarine
1 tbsp tartar sauce
1 x 340 g tinned corn beef
200 g broad beans
1 onion
Method
Steam parsnips and broad beans over hot water for 15 minutes or until soft enough to poke a knife through.
Blitz parsnips in a food processor with margarine and tartar sauce to turn it into mash.
Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas.
Dice onion and mix with corn beef and broad beans.
Mix half the parsnip mash with the corn beef and place in a baking dish.
Layer the remaining mash over the top and bake in the oven for 25 minutes until the surface turns golden brown.
