Pashwari Naan

Naan is a traditional flatbread from India and Asia. Pashwari is a special type of naan bread that is stuffed with a sweet fruit and nut mix, and goes well with curries



Preparation Time: 1 hour 40 minutes
Cooking Time: Approx. 2 minutes each
Serves: 8

Ingredients
500g strong white bread flour
7g fast action yeast
4 tbsp plain yoghurt
½ tsp salt
230 ml tepid water
1ml boiling water
2 tsp garlic granules
2 tsp dried coriander
60g currants
2 tbsp crunchy almond butter
Oil for frying

Method
  • Mix together the flour, yeast, yoghurt, salt, garlic, and parsley to form a dough.
  • Knead the dough for ten minutes and then prove for an hour.

  • Meanwhile, soak currants in boiling water.
  • Divide dough into 8 equal pieces and roll them out.
  • Drain any excess liquid from the currants and mix with the almond butter.
  • Put a small dollop of the mixture on each naan.

  • Roll up the flat dough into balls, covering the filling, and then roll out again.
  • Fry the naan in an oiled pan on each side until they start to brown and then place under the grill for about a minute or they begin to puff up slightly.
  • Serve with a curry.
