Passionfruit & Custard Scrolls

Passionfruit is a delicious fruit that is round to oval shape and has a dark purple exterior. The juicy interior is filled with edible seeds and juice. There are many uses for passionfruit such as topping for pavlovas and ice-creams, icing for vanilla slices, fruit juices and preserves, eaten directly, used in cocktails or even more exotic ways such as eaten with chilli powder and lime in Mexico. In this recipe, passionfruit is used in combination with custard to make some sweet scrolls for lunch or dessert.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 12 servings

1 cup self-raising flour
2 tbs icing sugar
40g butter, melted
1/3 cup milk
1/4 cup vanilla custard
2 tbs canned or fresh passionfruit pulp

Preheat oven to 210C and line a baking tray with baking paper.
Sift flour into a large bowl.

Add in the icing sugar and combine together with a metal spoon.

Pour the melted butter into the flour mixture and combine until it resembles fine breadcrumbs.

Add in the milk.

Combine until a soft dough forms.

Turn the dough onto a floured surface and knead until smooth.

Roll the dough out to form an approximate 20 x 35 cm rectangle.

Spread custard evenly over the dough.

Top with passionfruit pulp.

Roll up the dough starting from the long side to form a log.

Cut the roll crossways into 12 portions.

Arrange the portions on the lined tray. Drizzle with extra custard and passionfruit.

Bake for 20 minutes or until golden. Serve warm.

The passionfruit & custard recipe. TOO many photos when down loading recipe , but a lovely result. most people would know how without the photo I would think
