This is one of my favorite styles of chicken. At the moment, we have so many passionfruits falling off the vine, they find their way into many of my kitchen recipes. This Passionfruit Glazed Chicken is super easy to prepare and the result is surprisingly tasty and delicious - a little bit sweet and a little bit sour. Try and source free range, organic chicken as they are treated far more humanely and taste better anyway.

Passionfruit glazed chicken
Preparation Time: 5 minutes
Cooking Time: 30 - 40 minutes
Makes: 4 servings
Ingredients
500g diced (free range, organic) chicken
2-4 passionfruits
1/2 cup filtered water
1 tablespoon ginger (finely chopped)
1 tablespoon white vinegar
3 tablespoons brown sugar

Ingredients for the glaze
Method
Prepare the Passionfruit glaze - halve each passionfruit and scoop out the pulp with a spoon.
Warm the filtered water, white vinegar, finely chopped ginger, brown sugar and passionfruit pulp in a saucepan, so that all the glaze ingredients simmer and infuse together.
Arrange the raw chicken pieces (either diced pieces or drumsticks) in an oven proof baking dish.
Pour the passionfruit glaze over the chicken and bake in a moderate oven for 30 - 40 minutes or until the chicken is slightly browned.
Serve with fresh sauteed greens or my Recipe Yum Sweet Potato and Basil Salad would also go very well with this dish.
