Ingredients 500g cherry tomatoes
90ml olive oil
50g lettuce of your choice
2 sprigs of basil, torn
500g short pasta, such as rotini
150g Emmental or Swiss cheese, thinly sliced or grated
Salt and pepper
Chop the tomatoes then combine them with oil, basil and lettuce in a salad bowl. Season with salt and pepper.
Cook the pasta in a large saucepan of salted boiling water until al dente. Rinse under cold water, drain and dry on a clean kitchen towel.
Add the pasta to the bowl with tomato mixture. Toss well.
Top with cheese and mix gently. Serve.
