Pasta with Sausages Tomato and Greens

This is a hearty and delicious meal, great for a cold Autumn night. Instead of cooking the sausages and asparagus in the oven, you could cook them in the pot before adding the garlic and tomato, which would save a bit of time.



Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4

Ingredients
400g pasta
1 tbsp olive oil
2 cloves garlic, finely chopped
2 400g tinned tomatoes
2 bunches asparagus
Small handful green beans, roughly chopped
50g baby spinach leaves
6 beef sausages

Method
  • Preheat the oven to 180°C.
  • Place the sausages on an oven tray and put in the oven for 40 minutes, turning after 20 minutes, or until cooked through.
  • Break off the ends of the asparagus and add to the sausage tray for the last 10 minutes.
  • Meanwhile, heat the oil in a pot over low to medium heat. Add the garlic and cook for 1 minute, then add the tinned tomatoes. Bring to a simmer and cook for about 10 minutes.
  • Add the green beans to the sauce for the last 3-5 minutes. Take the sauce off the heat and stir through the baby spinach.
  • At the same time, bring a pot of water to boil. Add the pasta and cook until al dente.
  • When the sausages and asparagus are cooked, chop the asparagus into thirds and the sausage into bite size pieces. Add to the tomato sauce and mix well.
  • Serve the pasta in individual bowls and top with the sauce.
