Pears are a good source of dietary fiber and Vitamin C which is essential to a healthy body. And pies? well everyone loves pies. Normally when we think of pies we picture big juicy meat oozing out of pastries. Pies can also be sweet and delicate too as this recipe proves. It is also a good way to add a bit of spice to some ordinary pears.
Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 4 servings
Ingredients
3/4 cup caster sugar
4 cloves
1 lemon
1 tbsp lemon juice
4 pears
2 tbsp almond meal
1 tsp almond essence
1 tbsp unsalted butter, melted
2 sheets puff pastry, thawed
1 egg, beaten to brush
1 1/2 cup water
Method
Peel and core pears leaving the stem and the pear whole.
Zest and juice the lemon.
Place water, sugar, cloves, lemon zest and juice in a saucepan.
Stir over low heat for 2 minutes or until sugar has melted.
Place pears in the saucepan, poaching over low heat for 6 minutes.
Reduce the syrup over medium heat for 5 minutes and set aside for later.
Combine the almond meal and essence in a bowl.
Add melted butter to the almond mixture and combine well.
Fill each pear from the base with the almond mixture.
Roll out a sheet of puff pastry on a clean surface.
Using a knife, cut diagonally from one corner of the pastry (top left) to the opposite corner (bottom right).
Place a pear in the middle.
Wrap the pear with the pastry.
Cut off any excess and set aside to use later.
With the excess pastry, use a knife and cut out two leaf shapes.
Decorate the pears with the pastry leaves.
Brush pears with the beaten egg.
Bake for 30 minutes or until golden brown.
Serve warm with the syrup.
