Patatas Bravas

This is a spicy, Mediterranean variation on a classic new potato salad. It's delicious, hot or cold, and makes a great addition to a picnic lunch

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 4 servings



Ingredients
750g new potatoes (Jersey Royals, if you can get them)
1 tbsp olive oil
1 onion
200g cooking chorizo (sausages, not pre-sliced)
300g salad tomatoes
1 green chilli, deseeded and finely chopped
1tsp hot smoked paprika
Squeeze of lemon juice

Method
  • Wash the potatoes (no need to peel) and then halve them, or third them if they are larger. Cook them in a large pan of boiling water for about 15 minutes, or until they are tender.




  • Finely slice the onion, and fry gently in 1tbsp of olive oil until they are softened.



  • Drain the potatoes, and then add them to the onions, along with the chorizo. Cook for about 10 minutes until they start to brown.




  • Add the tomatoes, chilli, and paprika and give it a good stir. Cook for about 5 minutes until the tomatoes start to break down.





  • Stir in a squeeze of lemon juice, and then serve with garlic mayonnaise.
