Pavlova - Meringue Mix

Pavlova and meringues are a classic dessert, so versatile too. Who doesn't enjoy the simple peppermint crisp crushed over a whipped cream topped crusty and gooey pav?

All shapes can be piped with this recipe, vacherin shells, discs to be sandwiched with a chocolate ganache. Ducks, mice even hedgehogs studded with almond slivers, kids love them.


Preparation Time: 12 minutes.
Cooking Time: 25 minutes plus cooling time.
Makes: 1 small pavlova, up to 20 individual shapes.

2 egg whites
1/2 cup caster sugar
1/4 tsp vanilla extract
1 tsp plain vinegar


Preheat oven to 150c
Place whites into a clean and cool bowl, whisk on high speed until thick and stiff peaks but do not over whip.


Slowly add the sugar, a little at a time, do not turn off the beaters.
Add the vanilla and vinegar and whisk until the sugar has dissolved, approx. 5 minutes. The mix should be smooth, thick and shiny.


The mix is now ready for piping/shaping. For a pavlova I like to just spoon the mix onto a silicon mat and then with a palette knife shape a circle then round the edges with a symmetrical pattern.
Other shapes can be piped using a piping bag and nozzle. Add decorations if using now, smartie eyes, 100's and 1000's, almond slivers etc.


Place in the oven and reduce the temperature to 120c and cook for 25 minutes. Turn off the oven and with the oven door ajar leave them to cool slowly.
They are now ready for topping and serving.
