Pavlova Wreath

With my Grandpa's failing eyesight, he is finding it more difficult to make his annual Christmas sponge, so I decided to give him the year off, and make a different festive dessert.

This pavlova is light, but delicious, meaning you can indulge without feeling too guilty afterwards. It has a delightful mix of sweet, tart and bitter flavours.

Although I made it for Christmas, it can easily be turned into a summer dessert by swapping cranberries for raspberries, blackberries, or red currents.

Preparation Time: 20 minutes
Cooking Time: 1 hour
Makes: 6 servings

Ingredients
5 eggs
80g Sweetener (or 275g caster sugar)
1 tsp mixed spice
60g white chocolate
40g 100% cacao chocolate
200g soya yoghurt
100g creme fraiche
3tbsp icing sugar
100g fresh cranberries

Method



  • Pre-heat oven to 140 & #3872 ;C/ 120 & #3872 ;C fan/225 & #3872 ;F/ΒΌ G.
  • Separate the eggs, and whisk the whites to soft peaks.



  • Whisk in the sugar and spice.



  • Spoon the mixture onto a baking tray in a ring shape.



  • Bake in the oven for half an hour until golden brown, then lower the temperature by 20 & #3872 ;C and bake for another half hour until crisp.



  • Melt the dark and white chocolate in two separate bowls.



  • Whisk the yoghurt and creme fraiche with two tablespoons icing sugar, then pour over the pavlova.



  • Mix the cranberries with one tablespoon icing sugar, then scatter over the pavlova.



  • Drizzle the chocolate over the pavlova and allow to set.

  • Wipe away any excess, before serving.
