Delicious and creamy Pea & Feta Filo Cases for a light afternoon tea or lunch.

Makes: 12 servings
Ingredients
2 eggs, lightly whisked
1/3 cup thickened cream
2/3 cup frozen peas, thawed
50g feta cheese, crumbled
6 sheets filo pastry, thawed
50g butter, melted
Salt and pepper to season
Method
Preheat oven to 180°C, grease a muffin pan.
Cut filo pastry into squares.
Brush each sheet of filo pastry with the melted butter.
Place the pastry sheet into the muffin pan, allowing the corners to extend out of the pan.
Repeat for 7 more sheets rotating them slightly and overlapping.
Meanwhile whisk the cream and egg together, season with salt and pepper.
Remove from the oven and sprinkle with the peas and feta.
Bake for a further 15 minutes.
Remove from the oven and set aside to cool for it to set.
