Peanut Butter and Chocolate Brownie Slice

The way this brownie is made is like a cake style brownie that you cut into slices and serve as a dessert. It's not your typical fudgy brownie that's gooey in the middle. It was a chocolate brownie recipe and I added in peanut butter to make it even better.

Preparation Time: 10
Cooking Time: 30 minutes
Makes: 9 or 18 brownies

125g butter
1 cup castor sugar
2 eggs
3/4 cups plain flour
1/4 cup plus two tablespoons of cocoa or raw cacao
2 tablespoons of peanut butter

Preheat the oven to 180 degrees Celsius.
Measure out all ingredients so it's easier to prepare.
Chop butter into cubes and melt in a saucepan.

Melt butter in a saucepan.

When butter is completely melted take off the heat add in sugar.
Mix well with a whisk to dissolve sugar, then add in eggs one at a time.
Add in the peanut butter mix well until all incorporated.

Sift on flour and cocoa.
Change to a wooden spoon and mix well until all combined.
Line a baking tray with baking paper. The one I used measure 28cm by 18cm when measuring the outside.
Pour mixture in and smooth out evenly.
Bake for half an hour testing with a skewer to make sure it's set in the middle.
Leave on the stove top for 10 minutes allowing to cool slightly.

Take the brownie out of the baking dish with baking paper still underneath placing it on on a wire rack to cool.
When completely cool transfer to a cutting board. Cut off the edges cutting as close to the edge as you can. This is to make it nice and neat.

Cut brownie horizontally and then vertically to make it the size you want.

I like to serve it with a jam sauce. To make this I melt 1 teaspoon of raspberry jam per brownie in the microwave. Spoon it over the side and garnish with some chocolate and peanut butter pieces. You can
garnish however you like with some ganache and strawberries is nice too.
