Peanut Butter Jam Cups

These peanut butter and jam cups are everyone's favoruite childhood flavour combo wrapped in chocolate instead of bread. Make the chocolate and jam and even nutbutter yourself to make these extra special, or buy the already made ingredients for a quick 3 ingredient treat.

Preparation Time: 20 minutes
Cooking Time: 5 minutes
Makes: 14 servings

4 tbsp Coconut Oil
4 tbsp Cacao Powder
1-2 tbsp Rice Malt Syrup OR Stevia OR sweetener of choice

Jam: (make ahead of time)
300g raspberries
1 tablespoon agave nectar
2 tablespoon chia seeds
This makes a pot - you only need about 4 tbsp

4 tbsp Crunchy Peanut Butter or make your own walnut butter!

Combine the ingredients in a pot and simmer over a low heat until thick. Pour into sterilised jars and allow to set at least one hour before serving. For more detailed steps for jam click here

Mix the coconut oil, cacao and sweetener in a pot over a low heat until smooth.

Pour the chocolate mixture into paper or silicon cups and fill halfway. Place the tray in the freezer for 5 mins to set.

Once set take out and spoon a teaspoon of Peanut Butter and a teaspoon of raspberry jam into each cup. Cover with the remaining chocolate until the cup is full and return to the freezer for another 10 minutes.

Once set remove from the freezer and enjoy! These hold their shape well so can be packed to take to school or work, or enjoyed as a treat throughout the day!

These are very versatile - use your favourite jam, chocolate and nut butter! Another great combo is replacing the jam with slices of banana!
