Peanut Butter Oatmeal Cookies

This is a beautiful and moorish cookie that really hits the spot. It's flour-less, quick and so easy.



Preparation Time: 15 minutes
Cooking Time: 6-8 minutes
Makes: 12 cookies

Ingredients
1/2 cup packed brown sugar
1/2 cup crunchy peanut butter
1 1/4 cups quick porridge oats
1 egg
1/2 tsp baking powder
Couple of cubes of chocolate

Method
  • Preheat the oven to 180C.
  • Beat the sugar and peanut butter until fluffy and well combined.
  • Add the egg and beat until well combined.
  • Add the oats and the baking powder and mix until well combined.
  • Form the dough into a ball rolling it around the bowl to pick up any stray peanuts or mixture.
  • Halve the dough, then halve again 2 or 3 times until each ball is about the size of a large marble.
  • Line up the dough balls on a greased baking sheet and press down lightly.
  • Cook for 6-8 minutes, or until just beginning to golden. Don't worry, they won't be firm when they come out of the oven as biscuits carry on cooking.
  • Leave to cool for 5-10mins, and then transfer to a wire rack to cool completely.
  • For a fancier touch, melt a few cubes of chocolate, place into a ziplock bag, snip a tiny bit off the corner and pipe a messy zigzag over each cookie.
