Peanut Butter Oatmeal Cookies
This is a beautiful and moorish cookie that really hits the spot. It's flour-less, quick and so easy.
Preparation Time: 15 minutes
Cooking Time: 6-8 minutes
Makes: 12 cookies
Ingredients
1/2 cup packed brown sugar
1/2 cup crunchy peanut butter
1 1/4 cups quick porridge oats
1 egg
1/2 tsp baking powder
Couple of cubes of chocolate
Method
Preheat the oven to 180C.
Beat the sugar and peanut butter until fluffy and well combined.
Add the egg and beat until well combined.
Add the oats and the baking powder and mix until well combined.
Form the dough into a ball rolling it around the bowl to pick up any stray peanuts or mixture.
Halve the dough, then halve again 2 or 3 times until each ball is about the size of a large marble.
Line up the dough balls on a greased baking sheet and press down lightly.
Cook for 6-8 minutes, or until just beginning to golden. Don't worry, they won't be firm when they come out of the oven as biscuits carry on cooking.
Leave to cool for 5-10mins, and then transfer to a wire rack to cool completely.
For a fancier touch, melt a few cubes of chocolate, place into a ziplock bag, snip a tiny bit off the corner and pipe a messy zigzag over each cookie.
