Peanut Butter Protein Fudge

These little fudge bites are a great pick me up that pack a punch of protein and healthy fats. Make in bulk and always have on hand when you need a sweet treat or a pre-workout snack.



Preparation Time: 5 minutes
Cooking Freeze Time: 60 minutes
Makes: 18 servings

Ingredients
1 cup vanilla protein powder
1/4 cup coconut flour
1/4 peanut butter
1/2 cup plus 3 tbsp almond milk
2 tbsp coconut oil
4 tbsp maple syrup

Method
  • Line either a small loaf tray with baking paper.
  • Place all the ingredients in a bowl and mix well. (If it is cold and the peanut butter and coconut oil are solid warm in the microwave until they are runny and stir in).

  • Mix well until a dough is formed. You want the mix to be thick, almost like brownie batter.
  • Press the dough evenly into the lined pan.

  • Freeze for one hour or until fudge has hardened.
  • Remove from the freezer and cut into chunks.
  • Enjoy!
