Peanut Satay Tofu

Satay tofu is widely available pre-packaged in most supermarkets, however, I like to make my own with the knowledge that I am using good quality ingredients without any nasties included!

This easy and undeniably tasty main will tempt even the most stubborn meat eater in your house, and can be used in a variety of ways. Think rice paper rolls, mixed through a stir fry, in home-made sushi, added to salads or wraps... The list goes on!

Preparation Time: 10 minutes
Marinade Time: 2 hours
Cooking Time: 30-35 minutes
Makes: 4 servings

300g tofu
1/2 cup peanuts
1 tsp coconut oil (or other oil)
2 tsp red curry paste
1/2 cup light coconut milk

Place the peanuts and coconut oil in a food processor, and blend until smooth and slightly runny (about 5-10 mins).

Stir through the red curry paste and coconut milk until a uniform paste has formed. Consistency can be simply altered by adding hot water to the mixture - completely up to your taste.

Cut the tofu into pieces of desired thickness and place in a shallow dish. Cover with satay mixture completely and refrigerate for a minimum of 2 hours.

When ready to cook, preheat oven to 175C. Place the tofu across a lined baking tray and cook for 30-35 mins, or until golden and the satay sauce slightly crispy. Serve either hot or cold as desired.
