Pear and Camembert Filo Tart
I used Camembert but next time I would use blue cheese as it has a sharper taste
This is an unusual tart but nevertheless a most delicious one.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients
About 4 - 8 sheets filo pastry
40 g butter, melted
2 eggs
100 ml cream
1 tsp thyme
2 or 3 Corella pears
60 g Camembert or blue cheese
Method
Preheat the oven to 180°/160° fan forced.
Place a sheet of filo pastry on to a flat surface (I put it directly onto the baking paper and tray that I was going to cook it on).
Brush this sheet with melted butter.
Place another sheet of filo on top of this and brush again with the butter.
Repeat this layering till you have the desired thickness of pastry - I used 4 sheets but you CAN use more if you like the pastry a bit thicker.
Crunch up the edges of the pastry so it fits in the tray - or you could make it into two tarts.
Mix together the egg, cream, thyme and some pepper.
Take out the core of two of the pears (reserve half a pear), and thinly slice the pieces.
Divide the sliced pear on the tart.
Pour the egg and cream mixture into the tarts.
Put the half pear in the centre, and put dollops of the Cemembert cheese evenly around the tart.
Bake in the oven for 15 minutes or until it is golden and has set.
