Pecan Nut Sundried Tomato and Mushroom Gnocchi

With almost no preparation time this recipe can be whipped up in minutes after a long days work. This gnocchi preparation is with no sauce and the base is mainly of sun-dried tomato and mushrooms. If you are not a fan of gnocchi try this recipe and i am sure you will love it. So impress your loved ones with this gourmet dish.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
1 packet of gnocchi
3/4 cup of sun-dried tomato
1 cup of baby spinach
1/4 cup of pecan nuts
2 cloves of purple garlic
parmesan for garnish
fresh herbs for garnish
Oil for cooking
Salt to taste


Method
  • Boil the gnocchi according to packet instructions.

  • While the gnocchi is boiling assemble all the ingredients for the dish.
  • Stir-fry the gnocchi in olive oil till crispy brown.
  • While stir-frying the gnocchi chop the garlic and stir-fry the mushrooms in another pan.

  • Heat some oil in the same pan and fry the garlic for a few seconds.

  • Add the sun-dried tomato,mushrooms and pecan nuts.
  • Cook for a minute.

  • Now add the gnocchi and baby spinach.
  • Cook till all is combined and spinach is wilted.
