Peel Eat Beer Shrimp

Cooking Time: 10 minutes (Chill Time: 1 Hour)
Serves: 4

Ingredients
900 g raw deveined shrimp (thawed)
3 cans or bottles of dark beer
1 small yellow onion (quartered)
4 bay leaves
1 small bunch of fresh parsley
4 large cloves of fresh garlic
1-1/2 tbsp dried basil
1 tsp ground black pepper
1 lemon cut in wedges
Cocktail sauce if desired

Method
  • Put shrimp in pot, cover with beer.

  • Add onion, bay leaves, parsley, garlic, basil, and pepper.

  • Cover and bring to boil, simmer for about 3 to 4 minutes. Immediately pour shrimp into a colander.

  • Peel shrimp, put in covered bowl. Place in refrigerator to chill.

  • Garnish with parsley and lemon wedges.

  • Tip: cocktail sauce can be made by mixing a little horseradish with ketchup.
