The pepper and parmesan complements each other very well making these shortbreads full of flavour and spice. It is an easy snack to make for when you feel like something light to eat.

Makes: 20 servings
Ingredients
1 1/2 cup plain flour
30g parmesan cheese
1 tbsp caster sugar
1 tsp ground pepper
100g butter, softened chopped
3 slices of cheese (kraft singles)
50ml cold water
Method
Preheat oven to 180°C and line a tray with baking paper.
In a large bowl sift together flour, parmesan cheese and sugar.
Add the pepper and combine.
Using fingertips rub the butter into the flour mixture until it resembles fine breadcrumbs.
Break the sliced cheese into small portions and place into the breadcrumb mixture.
Stir and combine the ingredients with a metal spoon until a dough forms.
Turn the dough out onto a floured surface.
Roll the dough out into 1 centimetre thickness.
Using a sharp knife cut into 1.5 centimetre wide long strips.
Lightly prick the strips with a fork.
Bake for 20 minutes or until golden brown.
Serve as is or with extra parmesan to dust.
You can store the shortbread in an air tight container for up to a week.
