Pepper and Garlic Crostini
Meaning 'little crusts' in Italian, Crostini are small pieces of toasted bread with a bitesize topping. Although today they are thought of as posh party canapés, their origins are a lot more humble. Crostini dates all the way back to Medieval Italy and was peasant food, for the poor whose entire meal was so meagre it fit onto a small slice of bread.
While I don't suggest returning to such scant time, these pepper & garlic crostini would make an excellent starter for a celebratory dinner or finger food to pass out at a party.
Preparation Time: 35 minutes

Makes: 22 servings
Ingredients
2 small baguettes
2 green peppers
1 clove garlic
80 g cream cheese
2 tsp dried chives
4 tbsp avocado oil
1 tsp sunflower oil
Method
Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas.
Chop the peppers and peel the garlic, then roast in the oven for fifteen minutes.
Slice the baguettes into 26 pieces, and put the ends to one side.
Coat both sides of each slice of bread in avocado oil.
Toast under the grill for two minutes on both sides.
Blitz the garlic in a food processor, along with the chives and cream cheese.
Spread the cream cheese mixture over one side of each toast slice.
Top with the roasted peppers, and then place under the grill again for another two minutes.
