Peppered Ranch Prawn Pizza
This is a pizza topping that is very unusual and also delicious. Easy to prepare, you can make it as spicy as you want.
I had a base in the freezer from when I made my [link http://recipeyum.com.au/home-made-pizza-base-with-caramelized-onions-two-white-cheeses-and-potato/ pizza with caramelized onions ] and I used this as the base.

Ingredients
1 pizza [link http://recipeyum.com.au/home-made-pizza-base-with-caramelized-onions-two-white-cheeses-and-potato/ base]
About 8 large prawns
1 tbsp hot sauce, or to taste
¼ cup Greek yogurt
Bit less than ¼ cup blue cheese, crumbled
Bit of Ranch Dressing
Few chillis - optional
1 cup Mozzarella cheese, grated
¼ cup shallots, sliced
¼ cup Parmesan cheese, grated
½ stick celery, shaved with a vegetable peeler
½ carrot, peeled and shaved with a vegetable peeler
Method
Preheat the oven to 230°/210° fan forced. Put some baking paper over a pizza stone and cut to fit.
Mix the prawns with ¼ to ½ tbsp hot sauce and set aside.
Combine the yogurt, blue cheese and ranch dressing in another bowl, and mix.
Add a bit more hot sauce.
Spread the dough over the baking paper and roll out - it need not be even!
Cover the dough with the blue cheese mixture leaving a bit at the edges.
Add the chillis if using (I did not) and much of the Mozzarella cheese.
Add the raw prawns on top of the cheese.
Sprinkle with the sliced shallots.
Top this with the remaining Mozzarella and Parmesan.
Bake for 12 to 15 minutes or until the cheese is melted and the crust is lightly browned.
Allow the pizza to sit for about 5 minutes and sprinkle it with the shave celery and carrots.
Slice into 4 or 8 pieces and serve.
