Ingredients 1/2 cup cream
1 cup white chocolate
a pinch of salt
4 tbsp butter
green food colouring
3/4 cup chocolate chips
Melt the white chocolate, salt and butter in a saucepan on low heat or alternatively melt in the microwave for about 1 minute (Depending on your microwave and stir every 15 seconds until completely melted).
Pour cream in a saucepan and heat until simmering.
Remove cream from heat and whisk in white chocolate mixture.
Add peppermint mixture to taste (I prefer a strong peppermint taste so I opted for 3 tsps).
Add a few drops of green food colouring.
Cover the mixture with plastic wrap and allow it to cool to room temperature, add in chocolate chips.
Chill for 3-4 hours in the refrigerator.
Remove from fridge and use a spoon to scoop out small portions to be rolled into balls.
Drop peppermint balls into cocoa powder and roll them around till completely covered.
Chill truffles until solid and keep refridgerated ready to eat.
Dust your hands with cocoa powder before to avoid excessive stickiness.
Be careful of overloading the mixture with green dye, you will get very green truffles.
