Peppermint Patty Truffles

These little balls of heaven taste like peppermint patties and bring me back to my childhood. Except this version are healthy, rich and wonderfully morish.

These are the perfect treat to pop in a lunch box, enjoy after dinner, give as a gift or take to someone's house. They are dairy free, nut free, gluten free and egg free keeping everybody happy. Enjoy.

Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 15 servings

Ingredients
30 dates, pitted
3 tbsp cocoa powder
1-2 tbsp water
1 tsp peppermint extract
Pinch of salt
2 tbsp cocoa powder for rolling


Method
  • If dry, softened the dates in hot water for a few minutes, drain and add them into a food processor. Add in your 3 tbsp of cacao powder, water, peppermint extract and salt.

  • Blend until mixed well. You may need to stop the blades and push everything down once or twice until smooth, if the mixture is too wet add some oat flour, if it is too dry add more water.

  • Once the mixture is blended. Dust a surface with 2 tbsp of cacao powder and start rolling the mixture into balls and roll the balls into the cacao powder.

  • Repeat until all the mixture is gone. The recipe will make about 15 truffles.


  • Store in a glass container in fridge or freezer.
