Perfect Homemade French Fries

The trick to perfect French fries is in the technique rather than anything else. It is really very simple and your fries will be crisp on the outside and fluffy in the middle every time.

I cheat by using a mandolin (slicer) but you can use a knife. There's something sexy about hand cut chips too.

If you want larger chips then increase the cooking time in both cases and cook them in smaller batches.


Preparation Time: 5 minutes
Cooking Time: 7 - 9 minutes
Makes: 2 servings

200g potatoes (Golden delight or Sebago are ideal and readily available)
2 - 3ltrs vegetable or canola oil
Sea salt to taste (or chicken salt if the kids are about)


Peel potatoes and using the mandolin and the French fry attachment or a knife and slice the potatoes into fries.
Place them onto absorbent kitchen paper or a tea towel.
Pat them dry.


Heat the oil in a medium sized saucepan or use a commercially made deep fryer to 160c.
Once the oil is up to temperature tip the cut fries into the oil. Cook for 3 to 4 minutes until they are soft and slightly brown. Remove from the oil and drain on more absorbent paper.


Bring the oil up to 200c, place the fries back into the oil. They will only take 2 - 3 minutes in the hotter oil to crisp up.


Remove them from the oil, and place them in a bowl. Sprinkle with the salt and toss and serve.
