Perfect Scones

Everyone has a scone recipe, I've seen and heard plenty. Flour and cream, soda water, margarine and eggs are some of the ingredients people use.

I've been making these scones for 20 years, and they work perfectly and taste great. This recipe is adaptable in size, halved or quartered etc. The secret is not to over mix the recipe creating a tough dough and cooking in a hot oven.

Preparation Time: 10 minutes
Cooking Time: 12 -15 minutes
Makes: 30 servings

Ingredients
1 kg self raising flour
1 tsp salt
200gm butter (room temperature/soft)
600ml milk
Raspberry jam and whipped cream


Method
  • Preheat oven to 200c. Sift the flour into a bowl, add the salt and dice the butter.
  • Add the butter to the flour and rub in, coating all the flour or until it resembles fine breadcrumbs.


  • Add the milk and using a butter knife gently and quickly milk to a soft dough. Allow to sit for a few minutes to relax.


  • Turn out onto a lightly floured surface. shape into a ball and flatten to about 4cm.
  • Using a scone cutter or glass cut scones and place onto a baking tray (I line my tray with silicon).


  • Make sure the scones are just touching then brush with milk.

  • Place in the oven on a high shelf and cook for 12 - 15 minutes.


  • Serve with whipped cream and raspberry jam.
