Peri Peri Chicken Avo Lime Mayo And Sweet Potato Chips

Delicious, tender, char grilled, Peri Peri chicken. The avo lime mayo is a zesty accompaniment and great for dipping with sweet potato chips. Peri Peri, Swahili for "pepper pepper", is Portuguese in origin and prevalent in eastern African cooking. In this version I use chilli powder so I can adjust for desired spiciness based on who I am cooking for.

Preparation Time: 10 minutes (plus 8 hours to marinate)
Cooking Time: 35 minutes
Serves: 4

Ingredients
3 chicken breasts
For the Peri Peri marinade
1 tbsp sweet paprika
1 tsp dried chilli (see Tips)
4 cloves garlic, finely crushed (exclude for low FODMAP)
3 cm ginger, finely grated
1 lemon, juiced and finely zested
1/2 tbsp oregano
Salt and pepper, to taste

For the Avo Lime Mayo
1 avocado
1 lime, zested and juiced
1 clove garlic, crushed (exclude for low FODMAP)
1/2 cup coriander, finely cut
4 tbsp mayonnaise (or Dijon mustard if egg free) (optional)
1/2 tsp chilli powder
Salt and pepper

To serve
1 medium sweet potato, cut into chips
1-2 tbsp olive oil
1 tsp cayenne pepper
1/8 tsp salt
Salad, to serve
Cooked rice (optional)
1 lemon, sliced into wedges
Birdseye chilli, finely sliced

Method
  • Mix the Peri Peri marinade ingredients in a bowl.
  • Cut the chicken breast into 2-3 portions and make 1/2 cm cuts at 45 degree angles.
  • Combine the chicken and marinade, cover and refrigerate for a minimum of 8 hours.

  • In a bowl, combine all of the avo lime mayo ingredients, except the coriander, with a fork until smooth. Cover and refrigerate. Mix the coriander in when ready to serve.

  • When ready to cook, preheat the oven to 220 degrees and line one baking dish with baking paper.
  • Place the sweet potato on the baking tray, add oil, cayenne pepper, salt and toss to combine. Bake for 30 - 35 minutes until golden.
  • After the sweet potato has been in the oven for 15 minutes preheat a grill pan on high for 2-3 minutes until extremely hot. Alternatively preheat a barbecue grill.
  • Place the chicken on the grill and cook for 4 minutes each side. Turn the grill to low and cover with a lid for 2-3 minutes until the chicken is cooked through.

  • Serve the chicken with sweet potato chips, avo chilli mayo, lemon wedges, salad and rice. Enjoy.

  • Tips
  • For a mild marinade start with 1/8 tsp and increase to taste. Add more chilli for a spicy marinade.
