Pickled Daikon Radish

This sweet, tangy radish pickle is a perfect addition for sandwiches (especially the Vietnamese banh mi), as a topping on noodle dishes, or on its own with a splash of soy sauce.

Preparation Time: 10 minutes
Serves: 4

Ingredients
1 cup daikon
1/2 cup white or apple cider vinegar
1/2-1 cup warm water
1/4 tsp sugar
1/2 tsp salt

Method
  • Chop the daikon into thick batons, about 5cm long and 1/2cm thick.

  • I prefer a thick size for sandwiches.


  • Place the daikon in a small jar.
  • Combine the vinegar, sugar, salt and water in a bowl and stir until the sugar and salt dissolve.
  • Pour into the jar. If there is some remaining space in the jar, add more water.
  • Seal and place in the fridge for at least 2 days, but preferably a week, before using. You can leave it in there for a few weeks.
