Pig Trotter Broth

Chef Marco Pierre White’s pork trotter recipes, and cooking from head to tail attitude, inspired me to invent my own broth with some free range pork. The result is a flavoursome, gelatinous broth which can be added to make naturally thick, gluten free gravies, casseroles and sauces.

Pig Trotter Broth
The trotters will disintegrate when slow cooked

Preparation Time: 15 minutes
Cooking Time: 3 hours 40 minutes
Serves: 4

4 pig trotters
2 cloves garlic, minced (exclude for low FODMAP)
1 onion, diced (exclude for low FODMAP)
2 large carrots, sliced
1 celery stalk, slice
1 tsp thyme
1 tbsp oregano
2 bay leaves
4 cups water
Salt and pepper

Preheat the oven to 150 degrees.
Heat an oven proof dish on high, season the pig trotters and cook until browned on all sides.

Use tongs to rotate the trotters to cook on all sides

Add the onion and garlic and caramelise.
Mix in the carrots and celery and cook for 2 minutes until tender.
Stir in the herbs, season with salt and pepper, cover with water and bring to a boil.

The water will deglaze the pan adding to the flavour

Cover with an oven proof lid or foil and bake in the oven for 3 1/2 hours. Check and top up with water after 1 1/2 hours if necessary.
Strain and use 2-3 tbsp to thicken gravies or place in a sterilised jar in the fridge for up to 10 days.
