This pine lime splice cocktail is tropical, refreshing, tasty and what I make when we are craving a Splice-like cocktail on a hot summers day. I used fresh pineapple (not juice), lime and coconut milk. Serve at parties or as a decadent summer adults only treat to beat the heat. Enjoy.

Serves: 4
Ingredients
2 cups frozen pineapple
1 lime, juiced
1/2 cup coconut milk, chilled
1 cup ice
1/2 cup midori
1/8 cup vodka
4 strawberries or pineapple wedges to serve (optional)
Method
Blend pineapple, coconut milk and lime juice for 2 minutes. Use a spoon to scrape down the sides and blend for another 3 minutes until smooth.
Add ice and blend for 1 minute.
Add midori and gin and blend for 1 minute.
Serve immediately with a cut strawberry or pineapple wedge on the rim of the glass.

On a hot day the ice makes this drink refreshing.
Tips
Frozen pineapple is available at most supermarkets. Alternatively, cut a fresh pineapple and freeze for 6 hours or until frozen.
The coconut milk could be substituted with coconut cream.
The ingredients will separate over time or on a hot day. Either stir or enjoy as is.
