On a hot day this pineapple and lime sorbet is just the treat to refresh and help beat the heat. I am lucky that our lime tree is full of fruit. The hint of coconut reminds me of my childhood favourite ice cream - Splice.

Serves: 1
Ingredients
2 cups frozen pineapple
1 lime, juiced
1 tbsp coconut oil
Method
Blend pineapple and lime juice for 2 minutes. Use a spoon to scrape down the sides and blend for another 3 minutes until smooth. If not smooth blend in 30 second bursts until smooth.

The pineapple will be lumpy about 1 minute after blending
Add coconut oil and blend for 1 minute.
Serve immediately or freeze for later.

The coconut oil gives a nice flavour and helps to make the smooth consistency.
Tips
Frozen pineapple is available at most supermarkets. Alternatively, cut a fresh pineapple and freeze for 6 hours or until frozen.
The coconut oil could be substituted with coconut cream. Do not use coconut yogurt as it alters the flavour.
Sprinkle the sorbet with lime zest for an extra citrus hit or set aside to sprinkle on salads or use in sauces later.
