Pineapple and Lime Sorbet

On a hot day this pineapple and lime sorbet is just the treat to refresh and help beat the heat. I am lucky that our lime tree is full of fruit. The hint of coconut reminds me of my childhood favourite ice cream - Splice.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 1

Ingredients
2 cups frozen pineapple
1 lime, juiced
1 tbsp coconut oil

Method
  • Blend pineapple and lime juice for 2 minutes. Use a spoon to scrape down the sides and blend for another 3 minutes until smooth. If not smooth blend in 30 second bursts until smooth.

  • Add coconut oil and blend for 1 minute.
  • Serve immediately or freeze for later.

    Tips
  • Frozen pineapple is available at most supermarkets. Alternatively, cut a fresh pineapple and freeze for 6 hours or until frozen.
  • The coconut oil could be substituted with coconut cream. Do not use coconut yogurt as it alters the flavour.
  • Sprinkle the sorbet with lime zest for an extra citrus hit or set aside to sprinkle on salads or use in sauces later.
