Pineapple Chicken Lettuce Cups

Healthy, delicious, quick and colourful, this low FODMAP dish has everything going for it! Reminiscent of Asian-inspired tacos this dish can be served as an entrée, main or even a slightly messy party appetiser. For lunch on the go mix all the ingredients together with shredded lettuce to make a delicious salad.

This is definitely getting added to my go-to recipe collection.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 main-sized servings, 8-10 entrée/side dishes

Ingredients
1 large head lettuce – choose something that looks like it is durable enough to wrap around your filling
Filling
1/2-1 tbs garlic-infused olive oil
500g chicken mince
1 tbs soy sauce
1 tbs fish sauce
1/2 tbs lime juice
1 tsp fresh grated ginger or 1/2 tsp ground ginger
1/4 tsp cayenne pepper or chili flakes – adjust to taste
400g pineapple in pineapple juice, roughly chopped
NOTE: If you are following a low FODMAP diet check to make sure your pineapple is in pineapple juice not pear or another type of juice

Toppings
2 large carrots, grated
100g bean shoots
2 red capsicums, finely sliced
2 tbs rice wine vinegar (Alternatives: apple cider vinegar or white vinegar)
1/2 bunch fresh mint and/or coriander, chopped
1/4 cup cashews or peanuts, crushed

Method
  • Heat oil in a saucepan over medium heat. Once hot add mince, breaking up with a wooden spoon. Stir continuously to prevent chicken from clumping together.
  • Once chicken is cooked through (when you can’t see any pink bits) add soy sauce, fish sauce, lime juice, cayenne pepper and pineapple and mix thoroughly. Continue cooking until pineapple softens.



  • In a large bowl mix capsicum, bean shoots, carrot and vinegar.



  • To assemble lettuce cups, pick and wash your largest, roundest lettuce leaves. The inner leaves are always a little sturdier and less limp than the outer ones so make better lettuce cups. Fill each lettuce leaf with some veggie salad then spoon on chicken mince. Top with herbs and a generous sprinkle of nuts.

  • If you like things a bit spicy top with extra chili or Sriracha sauce.
