Pineapple Chicken
This was delicious with a lot of gravy and the combination of pineapple and chicken is a great one!

Ingredients
650 g chicken thighs
25 g flour
15 g butter
Butter
220 g can pineapple, drained -reserve liquid
1 large onion, sliced thinly
250 ml chicken stock
2 tbsp sour cream
Method
Wash and dry the chicken and cut off the visible fat - I always use free range chicken as it has less fat and just tastes nicer. I also cut them in half.
Put the flour in a plastic bag with some salt and pepper.
Add the chicken and shake until the chicken is coated.
Preheat the oven to 180°/160° fan forced.
Melt the butter in a wok or similar and add the pineapple and fry until it is brown - remove from pan.
Add some oil and put the onions in and cook for about 5 minutes.
Push them aside, increase the heat and brown the chicken pieces for about 15 minutes.
Transfer the chicken to a Corning Ware or similar ovenproof dish.
Mix the stock with the reserved pineapple juice, and add to the chicken and onion.
Add salt and pepper to taste.
Cover and cook for about 35 minutes.
When the chicken is cooked, take out much of the liquid the put it back in the wok.
Add 1 tbsp flour and stir till it thickens.
Add the sour cream but do not let it boil.
Pour this back over the chicken dish.
Serve either with rice or I had a crispy potato skin left over from another meal. This would be nice with a thick sliced of bread and butter to soak up the very yummy gravy!
