Pineapple Chicken

This was delicious with a lot of gravy and the combination of pineapple and chicken is a great one!

Preparation Time: 10 minutes
Cooking Time: 1 hour 20 minutes
Serves: 3

Ingredients
650 g chicken thighs
25 g flour
15 g butter
Butter
220 g can pineapple, drained -reserve liquid
1 large onion, sliced thinly
250 ml chicken stock
2 tbsp sour cream

Method
  • Wash and dry the chicken and cut off the visible fat - I always use free range chicken as it has less fat and just tastes nicer. I also cut them in half.

  • Put the flour in a plastic bag with some salt and pepper.

  • Add the chicken and shake until the chicken is coated.

  • Preheat the oven to 180°/160° fan forced.

  • Melt the butter in a wok or similar and add the pineapple and fry until it is brown - remove from pan.

  • Add some oil and put the onions in and cook for about 5 minutes.

  • Push them aside, increase the heat and brown the chicken pieces for about 15 minutes.


  • Transfer the chicken to a Corning Ware or similar ovenproof dish.

  • Mix the stock with the reserved pineapple juice, and add to the chicken and onion.


  • Add salt and pepper to taste.

  • Cover and cook for about 35 minutes.


  • When the chicken is cooked, take out much of the liquid the put it back in the wok.

  • Add 1 tbsp flour and stir till it thickens.

  • Add the sour cream but do not let it boil.


  • Pour this back over the chicken dish.

  • Serve either with rice or I had a crispy potato skin left over from another meal. This would be nice with a thick sliced of bread and butter to soak up the very yummy gravy!
