Pineapple Fried Rice

Fruity and delicious this fried rice dish is a perfect complement to more spicy main courses.



Preparation Time: 5 minutes
Cooking Time: 3-4 minutes
Makes: 1 servings

Ingredients
30g firm tofu diced 1cm thin slice
30g onion diced 1cm thin slice
30g carrot diced 1cm thin slice
1 cup steamed brown rice
30g pineapple diced 1cm thin slice
1tbsp spring onion thinly diced
¼ tbsp curry powder
1tbsp raisins
1tbsp tomato diced with seeds removed
A pinch of salt
1tbsp cooking oil
A few dropssSoy sauce

Decoration:
Lettuce
Carrot shredded
3 pieces coriander diagonally sliced
3 pieces tomato thinly sliced

To serve on top
1 tbsp or 10 toasted cashew nuts
Coriander
Vegetarian “meat” floss (optional)

Method
  • In a wok heat the cooking oil on a high heat until smoke starts to come.
  • Add the tofu, carrot and onion to fry together until the tofu is cooked and the carrot is soft (about one minute).
  • Add soy sauce to the pan and follow with the other ingredients for 2 more minutes keeping the heat on high.
  • To serve empty the contents of the wok into a small bowl to mould into shape and then tip upsideown on to a serving plate.
