Pineapples are one of the most delicious fruits available. If you find yourself with extra pineapples, how about some delicious . The pairing of pineapple with ginger and lime will have your family asking for more.

Preparation Time: 10 minutes
Cooking Time: 1 hour 20 minutes
Makes: 48, 1 tbsp servings


Ingredients
2 cups pineapple, diced
1 tbsp grated ginger root, grated (or to taste)
1 cup water
2 cups sugar
3 tbsp lime juice (about 2 limes)

DIRECTIONS
  • Puree pineapple and ginger root with water.

  • Place the pineapple puree a small saucepan with sugar.

  • Cook over medium-low heat until the pineapple is soft, about 30 minutes.
  • Add lime juice and stir to combine.

  • Cook until the mixture has thickened, about 30 to 40 minutes.

  • Spoon the jam into a 16-ounce jar with a tight-fitting lid.
  • Store it in the refrigerator for up to 3 months.
