Pineapple Salad

I've never like lettuce, which is a problem when it comes to finding a salad to enjoy because lettuce is generally the main ingredient. I therefore decided to whip up my own version, replacing the lettuce with some juicy grilled fruits. Based on the brands I used, one serving is about 199 calories.

Preparation Time: 20 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
40g mix of watercress, spinach, and rocket (I used a packet mix)
30g butternut squash
20g asparagus
1 tsp arrowroot
1 tin of pineapple in fruit juice
50g avocado
50g mango
2 tbsp raspberry vinegar

Method
  • Chop the butternut squash, asparagus, avocado, and mango, and mix together with 1 tablespoon raspberry vinegar.
  • Blend 80g of the pineapple with the fruit juice, and simmer in a saucepan.
  • Stir in the arrowroot until the mixture thickens, then add to the fruit and vegetable mix.
  • Grill the mixture for about five minutes.
  • Mix in the watercress, spinach and rocket, then drizzle over 1 tablespoon raspberry vinegar.
