Pineapple Salad
I've never like lettuce, which is a problem when it comes to finding a salad to enjoy because lettuce is generally the main ingredient. I therefore decided to whip up my own version, replacing the lettuce with some juicy grilled fruits. Based on the brands I used, one serving is about 199 calories.
Preparation Time: 20 minutes
Cooking Time: 5 minutes
Makes: 2 servings
Ingredients
40g mix of watercress, spinach, and rocket (I used a packet mix)
30g butternut squash
20g asparagus
1 tsp arrowroot
1 tin of pineapple in fruit juice
50g avocado
50g mango
2 tbsp raspberry vinegar
Method
Chop the butternut squash, asparagus, avocado, and mango, and mix together with 1 tablespoon raspberry vinegar.
Blend 80g of the pineapple with the fruit juice, and simmer in a saucepan.
Stir in the arrowroot until the mixture thickens, then add to the fruit and vegetable mix.
Grill the mixture for about five minutes.
Mix in the watercress, spinach and rocket, then drizzle over 1 tablespoon raspberry vinegar.
