Pineapple Upside Down Cake

This lovely cake will not only mesmerize your taste buds but also capture your eyes. Though it looks like a lot of work, its very easy and hassle free.

So yummy!

Preparation Time: 20-30 minutes
Cooking Time: 45-50 minutes baking time in an oven. Microwave takes 2 minutes
Makes: 6-8 servings

For the crust
1/4 cup unsalted butter, cut in small pieces
3/4 cup light brown sugar
1 medium pineapple (peeled, quartered, cored, and sliced 1/4 inch thick) or canned pineapple pieces
Diced strawberries or candied cherries

For the cake batter
1 and 1/2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup granulated white sugar
1 teaspoon pure vanilla extract
2 large eggs
1/2 cup milk

For the crust
In a saucepan, combine the butter and brown sugar and stir over medium heat until the butter has melted and the sugar has dissolved. Cook until bubbles just start to appear around the outside edges of the mixture. This signals the caramelization of the sugar.

Remove from heat, and pour into your prepared cake pan.
Arrange the pineapple and cherry or strawberry pieces over it.

For the cake
Sift together the flour, baking powder and salt.

Beat the butter and sugar until light and fluffy.

Add the vanilla extract.

Now add the eggs, one by one, beating after each addition. Be sure to scrape down the sides of the bowl every time.

Divide the flour mixture into three parts and milk in two. Add the flour alternating with the milk and combine well.

Pour the batter into the cake pan, smoothing the top.

Bake in preheated oven for 45 - 55 minutes, or until the top of the cake has browned and starts to pull away from the sides of the pan . If using a microwave, micro on 80% power for 2 minutes and 30 seconds more if necessary.

Remove from oven and place on a wire rack to cool for about 10 minutes. Loosen the edges and invert the cake onto your serving plate.

Decorate the top of the cake with more fruit or a dollop of cream
