I have used white rice with this recipe and added vegetables to it, so that it is a complete and healthy meal on its own.
I have made this before but this time as I was eating alone, I did not do the fancy version. At the bottom of the recipe, I have explained how to do this if you have visitors, as it looks rather unusual.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 2 as a main meal
Ingredients 1 large onion or shallot
1 garlic clove, crushed
1 tsp ginger
1 tsp chilli paste or half a green fresh chilli
1 carrot, grated
115 g rice, rinsed
Bit of saffron strand, crushed
1 cup vegetable sock
½ cinnamon stick
½ tsp ground coriander
40 g pistachios
225 g spinach
½ tsp garam masala
Tomato/onion for salad (optional)
Cut the onion and fry in some oil with the garlic, ginger and chilli, for about 5 - 8 minutes or until the onion is soft.
Mix in the grated carrot, and the rinsed and drained rice and cook for another minute.
Add the saffron, stock, cinnamon, and coriander, and add some salt and pepper, to taste. This recipe DOES need some salt.
Bring to the boil, cover and simmer it for about 15 minutes.
Add the garam masala.
To cook the spinach, I just added it after I turned the heat off and it wilted from the residual heat left in the pan.
Add the pistachios, remove the cinnamon stick, mix and serve.
If you want to make it look nicer, fry a small onion with a bit of garlic for a few minutes and then stir in the cut spinach and cook for a minute or two - then put this in a large circle on the plate with the rice in the middle.
