Pita bread has been a stable of the Middle Eastern diet for four thousand years. It was first believed to be developed by the Amorites and the Bedouins, who used to let the dough sit and collect yeast. As they began to travel and trade, pita bread spread to other parts such as Arabia and the Sahara. Once brewers years was discovered, that began to be used, adding greater depth of flavour. Now pita bread is used all over the world, with its hollow pockets making it excellent for filling with rice and curries. Based on the brands I used, each pita should be about 133 calories.

Makes: 12 servings
Ingredients
450g wholemeal bread flour
2 tsp fast action yeast
1 tbsp olive oil
1/2 tsp salt
400ml water
Method
Pre-heat oven to 220 ༠C/ 180 ༠C fan/425 ༠F/7 Gas.
Mix all the ingredients together to form the bread dough.
Divide the dough into twelve and roll out.
