Plantain / Banana fritters

The ripe plantain (banana) fritters is an all time favourite snack of almost all the Keralites. This is very easy to prepare and is very tasty.

The plantain fritter is known by different names in Kerala. The key to a tasty plantain fritter is to use ripe plantain (banana).

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

2 ripe plantain (banana)
1/2 cup plain flour
1 tbsp rice flour (optional)
3/4 cup water
3 tbsp sugar
Pinch of salt
Pinch of turmeric powder (for colour)
Oil for frying

Mix the plain flour, rice flour, sugar, salt and turmeric powder. Rice flour makes the fritters crisp.

Add water and mix well to form a thick batter.

Now slice each plantain lengthwise into 3 pieces with almost the same thickness.

Heat oil in a pan. Dip each slice in the batter so that the slice will be completely coated.

Fry the batter coated slices in the oil on medium heat. Flip the sides and fry until both sides are golden brown.

Fry in hot oil.

Remove from oil and place the fritters on a tissue paper to absorb any excess oil.

Fry in hot oil.

Serve warm with tea or coffee. Enjoy.
