Plum Cobbler

The idea behind this dessert is for the plums to gently stew beneath the scone-ish topping, however, you can also use other fruits such as peaches, nectarines, or apricots.




Preparation Time: 20 minutes
Cooking Time: 25-35 minutes
Serves: 6

Ingredients
1kg of plums, halved and stoned
1 tablespoon of caster sugar
1½ cups (225gms) of self-raising flour
100gms of butter, chopped
1/3 a cup (60 gms) soft brown cup
1/3 a cup (80ml) milk
1 egg
1 teaspoon of vanilla extract
Ice cream, cream or custard, to serve
Sifted icing sugar, for dusting (optional)

Method
  • Preheat the oven 180°C.
  • Arrange the plums in a 6 cup (1.5 litres) baking dish.
  • Sprinkle the caster sugar over and toss to coat.



  • Sift the flour into a large bowl. Using fingertips, rub in the butter, stir in the brown sugar and make a well in the centre.
  • Whisk together the milk, egg and vanilla extract, then add to the dry ingredients.

  • Fold together until just combined, do not overbeat.
  • Place large spoonfuls of the batter next to each other to cover the fruit.

  • Bake for 25-35 minutes or until topping has risen or it’s golden brown, serve hot with ice cream, cream or custard, dusted with icing sugar if desired.
