Plum Pizza

Pizza for pudding? Sounds good to me.

Preparation Time: 2 hrs 50 minutes
Cooking Time: 20 minutes
Makes: 8 servings

Ingredients
250g white bread flour
¼ tsp salt
½ tsp Truvia sweetener (or 20g caster sugar)
5g fast action yeast
30g plain yoghurt
175ml almond milk
45g margarine
100g muscovado sugar
2 satsumas
1 kg plums


Method



  • Mix together the flour, salt, sweetener/cast sugar, years, 30g margarine, yoghurt, and almond milk to form a dough.



  • Knead the dough for five minutes, and then prove for 1 ½ hours.



  • While the dough is proving, zest and juice the satsumas, and mix with the muscovado sugar, and remaining margarine. Heat it in the microwave for about thirty seconds until melted into a syrup.



  • Stone and quarter the plums.
  • Pre-heat the oven to 220 & #3872 ;C/ 200 & #3872 ;C fan/400& #3872 ;F/6 Gas.




  • Roll out the dough into a large pizza base and crimp the edges to form the crust.
  • Sprinkle the base with flour to soak up some of the juices while cooking.



  • Arrange the plum quarters over the base.



  • Pour over the syrup.



  • Bake in the oven for 20 minutes.



  • Use scissors to cut into 8 slices.
