Plum Upside Down Cake

Yes you can salvage ugly, aged, wrinkled plums, by turning them into a topping for an upside down cake.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 10 servings

Ingredients
2 eggs
75g of self-raising flour
75g of plain flour
100g of soft brown sugar
100g of butter



Method
  • Measure out your cake ingredients so they're ready to bake with.



  • Slice the plums and set aside. Don't worry if they're mushy and difficult to slice, when they're overripe this is normal.



  • Sift the dry ingredients together in a bowl.



  • Add the softened butter and whisk.
  • Add the eggs one by one and whisk after each - this makes the sponge lighter.



  • Place the chopped plum slices at the bottom of the cake tin. A loaf tin works equally well.



  • Pour the cake mix on top of the plums and place in the oven at 170 degress/between gas mark 4 and 5 for 35 minutes.



  • It does look stodgy, but standard cake mix where the mixture is more 'sloppy' will not work here because of the moisture and sugar in the overripe plums, so do not worry.



    Once baked leave to cool for at least 30 minutes before turning over to reveal the beautiful purply-pink underside of your well-made plum cake.
