This minestrone soup is not quite the same as you would normally cook. This bowl of minestrone soup is full of vegetable goodness and hearty poached chicken.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings
Ingredients
4 rashers bacon, diced
1 teaspoon dried rosemary
2 carrots, diced
2 sticks celeries, sliced
100g macaroni
1 handful frozen peas
1 cup frozen broccoli florets
100g spinach
2 chicken breasts, sliced into 2
1L vegetable stock
Salt and black pepper, to taste
Method
In a large stockpot, heat 2 tablespoons of vegetable oil.
Add in the bacon and rosemary.
Saute until crispy and browned.
Add in the carrot and celery and saute for 3 minutes.
Add in the stock and 1 litre of water, season with salt & black pepper.
Add in the macaroni and cook for 5 minutes.
Add in the chicken breasts and poach for 10 minutes.
Scoop out the cooked chicken to a chopping board and slice thinly.
Add the broccoli and peas into the soup. Cook for 3 minutes.
Add in the spinach and stir until just wilted.
Spoon the soup into a bowl and serve with poached chicken slices on top.
