Poached Chicken Minestrone

This minestrone soup is not quite the same as you would normally cook. This bowl of minestrone soup is full of vegetable goodness and hearty poached chicken.



Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
4 rashers bacon, diced
1 teaspoon dried rosemary
2 carrots, diced
2 sticks celeries, sliced
100g macaroni
1 handful frozen peas
1 cup frozen broccoli florets
100g spinach
2 chicken breasts, sliced into 2
1L vegetable stock
Salt and black pepper, to taste

Method
  • In a large stockpot, heat 2 tablespoons of vegetable oil.
  • Add in the bacon and rosemary.
  • Saute until crispy and browned.



  • Add in the carrot and celery and saute for 3 minutes.



  • Add in the stock and 1 litre of water, season with salt & black pepper.
  • Bring to the boil.



  • Add in the macaroni and cook for 5 minutes.



  • Add in the chicken breasts and poach for 10 minutes.



  • Scoop out the cooked chicken to a chopping board and slice thinly.



  • Add the broccoli and peas into the soup. Cook for 3 minutes.



  • Add in the spinach and stir until just wilted.



  • Spoon the soup into a bowl and serve with poached chicken slices on top.
