Poached Egg Flowers

Even through we know (as adults) that poached eggs is a quick way way to consume healthy food with the least calories, I've observed kids refusing to eat them. Since the poached eggs have no added fat, they make great accompaniment to salads, toasts or sandwiches and oh! they can be served on their own with a little salt and pepper.

Here is how to make poached eggs with capsicum to entice kids to consume the egg and eat the vegetable too!

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
1 large red capsicum
1 large green capsicum
1 large yellow capsicum
2 eggs (or as required)
4-5 sprigs rosemary
6 thin slices bread
Pepper powdered (fine)
Salt to taste

Method
  • Cut the capsicums in to rings up to 1 or 2 cm in height (as in image)
  • You may saute them for a few minutes in a pan as you would to a half-cooked state
  • Next grease a pan very lightly or use a fresh non-stick pan and heat it for a minute
  • Place the capsicum rings on the pan some distance apart
  • Break open the eggs and pour contents in to the capsicum rings (sunny-side up)
  • Add rosemary springs and salt & pepper to taste.
  • When cooked, carefully remove them from the pan using a wide spatula
  • Next toast the bread slices and trim the rough edges
  • Serve your poached egg flowers with the toasted bread slices

  • Use your imagination to add more color and variety to the designs you can cook with and this is a safe way to engage children in developing a healthy eating habit.
