Poached Egg with Asparagus & Cherry Tomatoes

A light simple breakfast for the health-conscious vegetarian.

Preparation Time: 1 minute
Cooking Time: 5 minutes
Makes: 1 serving

3 Stalks of seasonal asparagus
1 Free range organic egg
4 Organic cherry tomatoes
1 teaspoon Organic coconut oil

Take ingredients out of the fridge and chop the woody end of the asparagus off and add to a saucepan of boiling water for 2 minutes.

Whilst asparagus is boiling, hold firmly and halve each tomato with a sharp knife.

Careful not to get tomato seeds everywhere, take out a plate and add the tomatoes.

After 2 minutes take the asparagus out of the pan of boiling water.

Add to a small pan with 1 tsp of coconut oil and fry for 1 minute.

Whilst the asparagus fries, add the egg to the same
saucepan that was used to boil the asparagus.

This save's waste and so that the egg absorbs the nutrients in the water and poach it for 1 minute or longer depending on your preference.

Take the asparagus out of the frying pan and transfer to the plate with the tomatoes.

Using a large slotted spoon, take the egg out of the saucepan of boiling water and add to the plate & enjoy.
