Poached Egg with Asparagus Cherry Tomatoes

A light simple breakfast for the health-conscious vegetarian.

Preparation Time: 1 minute
Cooking Time: 5 minutes
Makes: 1 serving

Ingredients
3 Stalks of seasonal asparagus
1 Free range organic egg
4 Organic cherry tomatoes
1 teaspoon Organic coconut oil

Method
  • Take ingredients out of the fridge and chop the woody end of the asparagus off and add to a saucepan of boiling water for 2 minutes.



  • Whilst asparagus is boiling, hold firmly and halve each tomato with a sharp knife.



  • Careful not to get tomato seeds everywhere, take out a plate and add the tomatoes.



  • After 2 minutes take the asparagus out of the pan of boiling water.



  • Add to a small pan with 1 tsp of coconut oil and fry for 1 minute.



  • Whilst the asparagus fries, add the egg to the same
  • saucepan that was used to boil the asparagus.



  • This save's waste and so that the egg absorbs the nutrients in the water and poach it for 1 minute or longer depending on your preference.



  • Take the asparagus out of the frying pan and transfer to the plate with the tomatoes.



  • Using a large slotted spoon, take the egg out of the saucepan of boiling water and add to the plate & enjoy.
