Poached Eggs Ham Spinach Breakfast
Inspired by and combining Eggs Benedict and Eggs Florentine, this poached eggs breakfast makes the perfect start to any day.

Makes: 1 servings
Ingredients
1 muffin, halved
2 perfectly poached eggs
(recipe here)
100g bacon or ham (I used Coles Diced Bacon)
200g or 1 bag of spinach leaves
2 slices of cheese (tasty/cheddar)
small knob of butter
sprinkling of pepper, salt and paprika
Method
Place muffin halves on an oven-safe dish/plate.
In a pan, melt butter and toss in spinach leaves to wilt (under 2 minutes). Transfer onto the muffin halves.
In the same pan, fry/brown bacon or ham bits until desired crispness. Transfer onto the muffin halves atop spinach.
Place your poached eggs atop the layered muffin halves.
Top off with cheese slices and place dish into the oven for 5 minutes or until cheese melts and eggs are warmed up again. (about 120C for 5 minutes)
Sprinkle pepper, salt and paprika and serve immediately.
