Polenta Bites
Serve at your next party, it's a great low fat and healthy alternative to chips.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4-6 servings
Ingredients
2.5 Cups of Water
1 Cup of Polenta
Salt, Pepper, Oregano, Rosemary (to be used as seasoning)
Method
Bring water to the boil in a large pan.
Add polenta and stir until boiling then reduce heat and simmer for 5 minutes, continuously stirring.
Add Polenta to boiling water, then simmer for approximately 5 minutes, stirring continuously
Cooked Polenta should be firm
Remove polenta from the pan and spread over a board to a thickness of approximately 1.5cm and cut into cubes.
Spoon Polenta onto a board
Spread Polenta evenly over a board to a thickness of approximately 1.5cm
Cut Polenta into Cubes
Heat a small amount of oil in a pan, carefully dropping the polenta cubes into the oil. Pan fry until golden on each side.
Pan Fry Polenta Cubes until golden brown
Remove from heat and put cooked polenta cubes into a paper bag. Season the polenta with the salt, pepper, oregano and rosemary. Shake the bag to ensure the polenta is evenly coated with seasoning. Transfer to a bowl and serve.
