A refreshing salad that can be served warm or cold.

Ingredients
500g ready cooked polenta block
120g tinned sardines in olive oil
5 mixed colour peppers
200g cherry tomatoes
120g round lettuce
Method
Chop the tomatoes and peppers.
Drain the olive oil from the sardines into a frying pan. Use it to fry the sardines, tomatoes, and peppers at a low heat for about ten minutes with the lid on. Pour the mixture into a bowl.
Slice the polenta length ways into five pieces and fry them in the leftover juices from the pepper mixture for about five minutes.
If serving straight away, place a handful of lettuce on each plate and then layer it with a slice of polenta. Place a spoonful of the pepper mixture on top.
If serving later, break up the polenta and stir it into the pepper mixture with the lettuce.
